- A disease that truly needs strict attention to the proper diet is celiac
- sprue. This is a chronic intestinal disorder caused by intolerance to gluten,
- a substance found in certain cereal grains. Since the lining of the
- intestines is affected, fats may not be absorbed in a normal fashion, with the
- result that deficiencies in fat soluble vitamins (A, D and K) can occur. And
- that can lead to serious complications such as night blindness, weakening
- bones, and a decreased ability of the blood to clot. Knowledge about the
- condition, including what and what not to eat, is essential to individuals
- with this disorder and there is a wealth of information available from the
- Celiac Sprue Association/United States of America, Inc. (CSA/USA). Two
- publications are of particular interest. One is a pamphlet called "Celiac
- Sprue" which provides much information about the disease. The other valuable
- publication is their Restaurant Card which helps to make menu choices a bit
- easier. You get both free, on request, by sending a stamped self-addressed
